Cooking with Herbs
If   you add herbs to a dish cooking too soon, the flavor and benefit of the herb will be diminished or lost. Timing is important, such as when  rosemary to chicken. If baking chicken, add rosemary about 20 minutes before the dish is  done.   Lemon mint also compliments chicken and adding  several sprigs about 20 minutes before the baking is complete, will add a fresh layer to the  mix.
